Though these take a little restraint to only eat just one at 97 calories and 2 nets carbs these are a tasty fall apart in your mouth cookie with 8 grams of good fat and 3 grams of protein. Note: I have a heard time finding coconut flour so I simply take some shredded coconut and grind until ti is in a powderish form.

- 1.25 cups almond meal
- ½ cup Splenda
- 2 egg whites (whipped soft peaks)
- ¼ cup coconut flour
- 1 teaspoon vanilla
- ¼ cup butter (room temperature)
- Preheat oven to 350F
- Whip eggs to soft peaks add remaining ingredients and mix until combined.
- Scoop using teaspoon onto parchment paper on baking sheet and cook for 8-12 minutes until bottom just begin to brown.
