I picked up a couple of sugar pumpkin and made puree and had to get rid of the 10 or so cups I now had left around so decided to make some pumpkin pancakes. I started with my traditional paleo pancake recipe and modified for this one I like even better.

Ingredients
- 1 tablespoon coconut flour
- ⅓ cup almond flour/meal
- ⅓ cup pumpkin puree (canned or homemade
- 1 egg
- ¼ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon vanilla
- 1.5 teaspoon honey (optional)
- ¼ cup coconut milk
- ½ teaspooon baking soda
- pinch sea salt
Directions
- Add all ingredients to a blender and blend completely. Pour into hot skillet at medium heat until lightly browned
