Paleo pumpkin pancakes


I picked up a couple of sugar pumpkin and made puree and had to get rid of the 10 or so cups I now had left around so decided to make some pumpkin pancakes.  I started with my traditional paleo pancake recipe and modified for this one I like even better.

  • 1 tablespoon coconut flour
  • ⅓ cup almond flour/meal
  • ⅓ cup pumpkin puree (canned or homemade
  • 1 egg
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon vanilla
  • 1.5 teaspoon honey (optional)
  • ¼ cup coconut milk
  • ½ teaspooon baking soda
  • pinch sea salt
  1. Add all ingredients to a blender and blend completely. Pour into hot skillet at medium heat until lightly browned
