Paleo pancakes recipe


I have been playing with this recipe to not only come up with something delicious but also provide the nutrient profile I was looking for to start out my day.  High fat, decent fiber and a moderate amount of carbohydrates.  Here is what I came up with.

  • 2 tablespoons coconut flour
  • 1 tablesppon almond flour/meal
  • 1 tablespoon almond butter
  • 1 egg
  • ¼ teaspoon cinnamon
  • ¼ teaspoon vanilla
  • ¼ cup coconut milk
  • ½ teaspooon baking powder
  • pinch salt
  1. Add all ingredients to a blender and blend completely. Pour into hot skillet at medium heat until lightly browned
