These were extremely light and fluffy with a great crisp out coating. I offered them to my carb loving daughter without telling her and she responded with, “These are way better than our normal waffles.” preceded by a ask for seconds.

Recipe type: Breakfast
- 6 eggs
- 1 teaspoon oil
- ¼ cup sour cream
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- 1 teaspoon vanilla
- 1.5 tablespoon Splenda
- pinch of salt
- 1 scoop (~2 tablespoons) of protein powder
- 1 tablespoon almond meal
- Add all ingredients to bowl (or blender) and beat until well combined
- Batter will be very thin but will expand a bit, so add a small amount just covering the bottom of your waffle maker according to normal directions and cook until steam no longer is coming out. If done right should produce a very light waffle with a nice crisp outer coating.
- Top with some whipping cream and berries, sugar-free syrup, or natural peanut butter.
