Low carb waffles
These were extremely light and fluffy with a great crisp out coating. I offered them to my carb loving daughter without telling her and she responded with, “These are way better than our normal waffles.” preceded by a ask for seconds.

Ingredients
  • 6 eggs
  • 1 teaspoon oil
  • ¼ cup sour cream
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon vanilla
  • 1.5 tablespoon Splenda
  • pinch of salt
  • 1 scoop (~2 tablespoons) of protein powder
  • 1 tablespoon almond meal
Directions
  1. Add all ingredients to bowl (or blender) and beat until well combined
  2. Batter will be very thin but will expand a bit, so add a small amount just covering the bottom of your waffle maker according to normal directions and cook until steam no longer is coming out. If done right should produce a very light waffle with a nice crisp outer coating.
  3. Top with some whipping cream and berries, sugar-free syrup, or natural peanut butter.

    These look fantastic! Did you take the picture yourself? I follow paleo so I guess I would substitute the flax for almond flour. Do you think this recipe would work with coconut flour? Thanks for sharing!

      Yeah coconut flour would work, I have replaced the flax seed with extra almond flour and they still were great. The flax adds a little more hearty texture but differs from your typical waffles.

    Have you tried it without any sweetener at all? Or with stevia in place of the Splenda? My wife is sensitive to Splenda and though we’ll probably try these experiments ourself it’d be good to know if someone already has.

      You could use an alternate sweetner or none at all. Actual sugar would give the waffles a bit more of a crunch if you can tolerate a little bit.
