Low carb waffle cake recipe


This is another version of a low carb waffle recipe that is also light and fluffy with a crisp exterior perfect for a healthy breakfast and/or topped with some berries and a bit of whipping cream for a delicious dessert. At 195 calories and only 4 nets carbs this is one you don’t have to feel guilt about.

  • 2.5 tablespoon melted butter (unsalted)
  • 2 eggs
  • 1 teaspoon baking powder
  • 1.5 T equivalent sweetener
  • ½ cup coconut milk
  • 1 cup almond meal
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  1. Add melted butter and eggs into a bowl and whisk until well combined
  2. Add remaining ingredients and add portioned amount of batter into waffle iron and cook as usual
  3. Top with some berries and some artificially sweetened whipping cream and enjoy
