I was craving a peanut butter cookie, I checked a few recipes online and couldn’t find one that I liked so I came up with the following recipe. With only 73 calories, 3 grams of protein, and only 1 net carb this beats out nearly all the snacks I see at my local health food store. The cookies rise a little to make a tasty light soft cookie to provide a good nutritious solution to any of those sugar cravings.

Ingredients
- ½ cup peanut butter
- ½ cup Splenda
- 2 tablespoons almond flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 egg
- ½ teaspoon vanilla
- pinch of salt
Directions
- Preheat oven to 350F
- Combine ingredients and mix with a fork until completely combined
- Spoon on a ungreased baking sheet and cook for 12 minutes or until bottoms just start to brown
