Low carb chocolate pie with chocolate crust

Not the lowest carb dessert out there but much better than the alterative.  it has an ultra light chocolate crust made from protein powder and almond flour and some good fats.  Topped with a filling of sugar free chocolate pudding with some whipping cream added for some more body.  This version of this chocolate dessert comes in at 242 calories and 6 net carbs.  Not bad considering the non-low carb version of this recipe tops 332 calories and contains 49 grams of carbohydrates.

Ingredients
  • 2 scoops (1/2 cup) of chocolate protein powder
  • ½ cup fat solid at room temperature (coconut oil, butter, shortening, lard, etc)
  • ½ cup almond meal
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon Splenda
  • 1-2 tablespoons of water
Directions
  1. Add all ingredients (except water) to bowl and cut with knife until looks like a bunch of brown peas
  2. Add water one teaspooon at a time until the dough holds together.
  3. Wrap in plastic and put into the refridgerator for 1-2 hours
  4. Lay between two square pieces of wax paper and roll out until dough gets to all sides
  5. Place in pie pan and cook at 350F for 15 minutes or until it just starts to brown.
  6. Allow to cool.

Ingredients
  • 1 package sugar free chocolate pudding
  • 2 cups coconut milk
  • ¼ cup whipping cream
  • 1 low carb chocolate pie crust
Directions
  1. Whip whipping cream until stiff peaks (flipping over whisk whipped cream still points straight up)
  2. Add coconut milk and chocolate pudding and mix until combined
  3. Pour into pie crust, cover, and refrdigerate for 2 hours.
  4. Top with optional whipping cream and/or dark chocolate shaving and enjoy
