About to head out on a 3 day conference I wanted to bring something small but filling to snack on when the typical free cookies, brownies, and pastries were brought out during breaks between sessions. I came up with this chocolate and peanut butter cookie that was delicious but also pretty filling with a good dose of protein as well as fat.
One added bonus is they had a slightly crispy exterior which game them an interesting crunch but also preventing them from falling to pieces while transporting in my bag.

Ingredients
- ¼ cup peanut butter
- ¼ cup butter
- ¼ cup Splenda
- ¼ cup almond flour
- 1 scoop of chocolate protein powder
- ½ teaspoon baking powder
- 1 tablespoon baking cocoa
- 1 egg
- ½ teaspoon vanilla
- pinch of salt
Directions
- Preheat oven to 350F
- Combine ingredients and mix with a fork until completely combined
- Spoon on a ungreased baking sheet and cook for 12 minutes or until bottoms just start to brown
- Optional: Add a couple of crushed nuts (I added some walnuts in the picture above)
