Low carb almond flour cookie recipe

Though these take a little restraint to only eat just one at 97 calories and 2 nets carbs these are a tasty fall apart in your mouth cookie with 8 grams of good fat and 3 grams of protein.  Note: I have a heard time finding coconut flour so I simply take some shredded coconut and grind until ti is in a powderish form.

Ingredients
  • 1.25 cups almond meal
  • ½ cup Splenda
  • 2 egg whites (whipped soft peaks)
  • ¼ cup coconut flour
  • 1 teaspoon vanilla
  • ¼ cup butter (room temperature)
Directions
  1. Preheat oven to 350F
  2. Whip eggs to soft peaks add remaining ingredients and mix until combined.
  3. Scoop using teaspoon onto parchment paper on baking sheet and cook for 8-12 minutes until bottom just begin to brown.
