Paleo/Low carb waffles recipe

Ingredients
  • 6 eggs
  • 1 teaspoon oil
  • ¼ cup sour cream
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon vanilla
  • 1.5 tablespoon Splenda
  • pinch of salt
  • 1 scoop (~2 tablespoons) of protein powder
  • 1 tablespoon almond meal
Directions
  1. Add all ingredients to bowl (or blender) and beat until well combined
  2. Batter will be very thin but will expand a bit, so add a small amount just covering the bottom of your waffle maker according to normal directions and cook until steam no longer is coming out. If done right should produce a very light waffle with a nice crisp outer coating.
  3. Top with some whipping cream and berries, sugar-free syrup, or natural peanut butter.
